Cookie Peanut Butter Bars Crust Recipe

Chocolate Chip Cookie Bars taste even better when they’re swirled with creamy peanut butter! These Peanut Butter Chocolate Chip Bars are a must try for anyone who can’t get enough chocolate and peanut butter treats.

Two things have never been more loved than chocolate and peanut butter. While we LOVE peanut butter cookies, the addition of chocolate is just perfect.

Ingredients

  • 7 oz Double Chocolate Chip Cookies
  • 2 tbsp butter, melted
  • Filling
  • 1 cup (8 oz) peanut butter, room temperature
  • 1 stick butter, room temperature
  • 1/2 powdered sugar
  • Topping
  • 8 oz dark chocolate
  • 1 tbsp coconut oil

How To Make Cookie Peanut Butter Bars Crust

1- Butter a 9″x5″ pan and line it with parchment paper, leaving an overhang on the sides to lift the finished bars out.

2- Using a food processor, pulse the cookies into crumbs. In a small bowl, mix cookie crumbs and melted butter; press on the bottom of prepared pan.

3- Place the butter, peanut butter and powdered sugar in a medium bowl. Mix with an electric hand mixer on medium to high speed, until it gets soft and fluffy.

4- Transfer the filling on top of the cookie crumb layer and smooth it out.

5- Refrigerate for about 30 minutes. Place the chopped chocolate in a heatproof bowl over a saucepan of simmering water (don’t let the bowl touch the water).

6- Stir until melted and smooth. Spread evenly over peanut butter filling. Refrigerate until set, for about 1 hours.

7- Use the parchment paper to lift the bars from the pan and cut into small pieces with using a hot knife. Store bars in the refrigerator.
