This no-bake cherry cheesecake is a classic crowd-pleaser that’s sweet and simple. It’s made from a graham cracker crust, creamy cheesecake filling, and sweet cherry pie topping.
Ingredients
- For the cake;
- 3 eggs
- ½ cup granulated sugar ½ cup all-purpose flour
- 2 tsp vanilla sugar
- 1 tsp baking powder To wet the cake; 200 ml milk
- For the cream;
- 160g white chocolate
- 400 ml heavy cream 1 tbsp icing sugar
- For the cherry sauce;
- 2 tbsp starch
- 60 ml water
- 400g sour cherries
- 5 tbsp granulated sugar
- 200 ml water
Instructions
1- For the cake, beat 3 eggs with ½ cup of granulated sugar until fluffy.
2- Add ½2 cup of all-purpose flour, 2 tsp of vanilla sugar, 1 tsp of baking powder and mix everything together.
3- Line an oven tray with parchment paper. Place a springform cake pan on the parchment er and pour the batter.
4- Bake in an oven preheated to 180° degrees about 30 minutes. Get the baked cake out of the pan with the help of a knife.
5- Place a serving plate upside-down on top of the cake pan and carefully invert the cake onto the plate.
6- Peel off the parchment paper on topof the cake. Place the springform pan again.
7- Pour 200 ml of milk evenly over the cake and let it soak the milk while preparing the cream.
8- Place a large bowl over a pot of hot water. Chop up 160 g white chocolate into small pieces and place in the bowl. Remove from the heat when it is melted completely.
9- In a mixing bowl, beat 400 ml of heavy cream with 1 tbsp of icing sugar. Then, add the melted and cooled white chocolate and keep on beating until thickens.
10- Pour the cream over the cake and spread evenly. Cover the top with cling film and let it rest in the refrigerator for at least 2 hours.
Sauce
11- For the sour cherry sauce, mix 2 tbsp starch with 60 ml of water and whisk to dissolve. Place 400g of sour cherries in a sauce pan.
12- Add 5 tbsp of granulated sugar, the starch that you dissolved and 200 ml of water. Cook by whisking until boils and thickens.
13- Sour cherry sauce is ready. Transfer it to a bowl so that it cools down faster. When it is cooled, cover the top of the cake with the sauce.
14- Summer cake with sour cherry sauce is ready to serve. Hope you enjoy!
