Homemade Perfect Ratatouille Recipe

Ratatouille is a simple dish of layered vegetables cooked until tender. We top it with fresh herbs and a splash of olive oil. Healthy, simple, and pretty, serve these roasted vegetables with crusty bread or even pasta.

Ratatouille (rat-a-too-ee) comes from Nice, France, and is actually a simple but delicious vegetarian dish (and it was also in this style in the Disney movie of the same name).

There are two different ways this dish can be prepared. Either with chunked vegetables cooked in a broth resembling a vegetable stew or sliced and layered like as in this particular recipe.


  • 3-4 potatoes
  • 2-3 eggplants
  • 2-3 zucchinis
  • 3-4 tomatoes
  • For the sauce
  • 1 onion
  • 60 ml of vegetable oil
  • 3 cloves of garlic
  • 3 green peppers
  • 3 peeled and cut tomatoes
  • Grated mozzarella cheese
  • 1 tbsp of butter
  • Salt, pepper, paprika, dried thyme

How To Make Ratatouille

1- For the sauce; brown 1 chopped onion with 60 ml of vegetable oil.

2- Add 3 cloves of chopped garlic and 3 chopped green peppers and saute for about 3 minutes.

3- Add 3 peeled and cut tomatoes and 1 tbsp of butter. Cook for 2-3 minutes.

4- Finally add salt, pepper, paprika, dried thyme and stir. Turn off the stove.

5- Pour the sauce into an ovenware and spread to cover the bottom.

6- Cut potatoes, eggplants, zucchinis and tomatoes into rings and layer the sliced veggies on top of the sauce.

7- Line with parchment paper on top and cover with aluminum foil.

8- Bake for 20 minutes in an oven preheated at 200 °C. Later, uncover the ovenware and continue baking until the vegetables soften.

9- Finally sprinkle with grated mozzarella.

10- Put back into the oven until the mozzarella melts and golden browns.

11- Ratatouille is ready to serve.
