Perfect Coconut Cake “Cocostar Pasta” Recipe

Hi friends ! Today we will give you a delicious coconut cake recipe. Cocostar cake , which is one of our snack dessert , is available in many cafes and is made and consumed in many homes.

This cake , which attracts people of all ages, is an indispensable part of the treats prepared especially for the guests. In addition to decorating our tables with its appearence , it also received full points from everyone with its taste.

Although it is a little difficult to prepare , you will definitely think it’s worth it when you eat it. Because the harmony of coconut cream and chocolate on its soft cake is perfect.

Ingredients

  • For the Cake
  • 2 eggs
  • ½ cup of granulated sugar
  • 120 ml of fresh milk
  • 1 cup of all purpose flour
  • 2 tbsp of cacao
  • 2 tsp of vanilla sugar
  • 2 tsp of baking powder
  • For the Filling
  • 75 gr of chantilly powder
  • 180 ml of cold milk
  • 2 cups of grated coconut
  • 1 tbsp of icing sugar
  • For the Glaze
  • 100 gr of milk chocolate & 60 gr of dark chocolate
  • 200 ml of milk cream

How To Make “Cocostar” Cake

1- Line a 26 cm-diameter springform pan with parchment paper.

2- In a whisking bowl, beat 2 eggs with 1/2 cup of granulated sugar until whitens.

3- Add in 120 ml of fresh milk and sift together 1 cup of flour, 2 tbsp of cacao, 2 tsp of vanilla sugar and 2 tsp of baking powder into the bowl.

4- Whisk thoroughly. 5- Pour the cake batter into the springform pan.

6- Bake for 25-30 minutes in an oven preheated at 170°C.

7- Set the cake aside and let it cool.

8-For the coconut layer: Whisk 75 gr of chantilly powder with 180 ml of cold milk until stiffens.

9- Add 2 cups of grated coconut and 1 tbsp of icing sugar and mix.

10- For the chocolate ganache: Heat 200 ml of milk cream until it reaches the boiling point. Add 160 gr of chocolate chunks and mix until the chocolate is melted completely. We used 100 gr of milk chocolate and 60 gr of dark chocolate.

11- Wet the cake with 200 ml of milk.

12- Spread the coconut mixture over the cake and flatten with a spatula.

13- Finally, pour the cooled chocolate ganache over the cake and refrigerate for 3-4 hours.

14- Decorate the cake as desired before serving.
