This well loved Turkish dish is really healthy and delicious. A very easy vegetarian recipe, you just combine cooked red lentils and parsley with spices and seasoning and shape into patties. Perfect for entertaining a crowd.
Ingredients
- 6 glasses of red lentils
- 1 glass of simit (cracked wheat)
- 1 tablespoon pepper paste
- 1 tablespoon tomato paste
- 2 onions
- 1/2 cup oil
- 2 bunches of parsley
- 250 gr spring onions
- 250 gr fresh garlic
- salt and red pepper
- Water
Instructions
1- Place the red lentils in a pan with water to a depth of two fin- gers over the lentils. Add a little salt and pepper and simmer.
2- When almost cooked, add the tomato and pepper paste and cracked wheat. Simmer on low for 2-3 more minutes and then turn off the heat.
3- Chop the onions very finely, saute in the oil and add red pepper. Chop the vegetables and set aside. When the lentil and cracked wheat mixture is cool enough to handle, knead for 5 minutes.
4- Add the onion and oil mixture and knead further. Add the chopped parsley, onions and garlic, and squeeze into small croquettes in the palm of your hand or spread on a dish and serve with a spoon.
