Turkish Katmer Recipe, The Best Recipe

Katmer is another delicious dessert that is native to Gaziantep city of Turkey. It is a crisp phyllo dough dessert that contains pistachios and clotted cream in it.

Gaziantep city locals start the day with this dessert. They prefer to eat it at breakfast because pistachio nuts increase energy levels and reduce morning fatigue. There are some small shops in Gaziantep city that only serves Katmer for breakfast.


  • For the dough:
  • 150 gr flour
  • 1/2 cup water
  • 1 tea spoon salt
  • For the filling:
  • 2 tablespoons sugar
  • 2 tablespoons ground pistachios
  • 100 gr cream


1- Combine the dough ingredients and knead. When it has the “consistency of an earlobe” (not sticky, firm but pliable), shape into a ball with your hands.

2- Oil the ball with a little sunflower oil and let it sit for one hour. To roll out the dough, first flatten the ball by hand and then use a rolling pin to stretch it out.

3- Extend it further by tossing it in the air with your hands. When it is paper-thin, straighten the edges and fold each of the four corners inwards to the center.

4- Place the filling on top and fold the corners to the middle again to make a packet.

5- Place on a baking tray and cook in the oven for 10-15 minutes until gold- en. Your katmer is ready to serve.
